This Eggplant and Kale Parmesan dish is a wholesome twist on the classic Italian eggplant parmesan recipe. It adds nutrient-packed kale for an extra serving of greens. The layers of eggplant, kale, tomato sauce, and melted cheese create a comfort food that's still packed with vitamins and fiber. This dish is perfect for a small family dinner and pairs wonderfully with a side of crusty bread or a light salad.
Ingredients
- 1 large eggplant
- 1/2 bunch of kale, stems removed and chopped
- 1/2 cup of flour
- 1 egg
- 1 cup of breadcrumbs
- 1 cup of tomato sauce
- 1 cup of shredded mozzarella cheese
- 1/2 cup of grated Parmesan cheese
- 2 cloves of garlic, minced
- Olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Directions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Slice the eggplant into 1/2-inch thick rounds.
- Set up three shallow dishes for a breading station: one with flour, the second with beaten egg, and the third with breadcrumbs. Season each dish with salt and pepper.
- Dip each eggplant slice into the flour, shaking off excess, then the egg, and finally coat in breadcrumbs. Place breaded eggplant slices on the prepared baking sheet.
- Bake the eggplant slices for about 20-30 minutes, flipping halfway through, until they are golden and crispy.
- While the eggplant is baking, heat a tablespoon of olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant. Add the chopped kale and cook until wilted. Season with salt and pepper.
- Once the eggplant is done, reduce the oven temperature to 350°F (175°C).
- Spread a thin layer of tomato sauce at the bottom of a baking dish. Place a layer of eggplant slices, then a layer of sautéed kale, followed by a sprinkling of mozzarella and Parmesan cheese. Repeat these layers until all ingredients are used, finishing with a layer of cheese on top.
- Bake the Eggplant and Kale Parmesan in the oven for 20-30 minutes, or until the cheese is golden and bubbly.
- Let the dish cool for a few minutes before serving. Garnish with fresh basil leaves on top and serve warm. Enjoy!
